You also mentioned that you're getting a three day pass at Disney but want to do Magic Kingdom, Epcot and Universal. Universal is it's own park and has nothing to do with Disney...so you might want to double check that. Disney's Hollywood Studios would be the Disney equivilent to the Universal park.
The new Toy Story ride they have at that park is probably the "coolest" ride in the park...for kids and adults.
