both, hot sauce and yellow mustard. Mostly mustard, cover the top of it pretty good with hot sauce, mix then put fish in, latter them up with it, then pat them down with the fish fry, into the fryer. Very simple, taste great.

If I feel like messing with it we can take the heads and guts and use them to bait a couple crab traps, put them out for a day or two and then you got yourself a nice crab boil
I'd probably pass on the fish head soup though ;)
