You're assuming that they've thought this through rationally. That's not the case at all. Most have convinced themselves that the risk is next to nil in order to justify making the money, or they simply ignore the possible consequences.
That would be fine, if they were the only one to suffer the consequences if/when they are wrong. But that decision also effects the other performers they work with and all the performers those people work with.
If all of these people were able to consistently make rational and responsible decisions, many of them would have lucrative careers doing something other than fucking in front of the camera. I'm not saying that all, or even most, that are escorting on the side are incapable of being rational and responsible but the percentage is high enough that any "industry wide" policy dealing with this issue has to assume that the performers will not be truthful about their off set sexual activity.
