They're making it so easy to do at this point it's crazy not to. Seriously, they've already got Jelly Bean roms for some of the phones. My 2 year old Epic 4G loaded up very alpha version of a 4.1 port this morning. Sprint stopped updating this phone a year ago now. Thanks to the XDA developers I really have no need to buy a new phone. I am having a hard time giving up my physical keyboard.
All that said, ROOT your phone and install a custom ROM of some sort. Even CyanogenMod and it's offshoots will give you all the features the carriers strip out of the phone.
They're forcing people to use HTML5 versions of their sites and not flash. This is easier now that most people have adopted this because of Apple's insistance on using it.
