Personally I just started getting Seabass here in Norway, which was not a part of our fauna until mid 90s. It is a really fun fish to catch. Other than that it is salt-water trout, salmon and halibut is always fun - especially when you get the 150 pound ones. In the local lakes I typically aim for the trout - hard, but fun to catch.
Here theres always something good to catch depending on the time of year yellowfin tuna is winter grouper is year round as are snapper but there are open and closed seasons which change from year to year as do catch limits.
