Oh... it depends a lot. The region and the type of kebab. For example,
shawarma is a kebab (döner kebab) which is usually made with chicken meat. Russian/Georgian
shashlik (shish kebab) is usually made with pork meat, while the Azerbaijani or Armenian made from lamb meat (personally I like both).
Lula-kebab can be made of lamb, pork, chicken and even beef. There are many other types of kebab such as tandir kabab, tava kebab, chag kebab etc...
