I think you misunderstood this concept, it's not about pretending to be a restaurant but rather setting up multiple virtual restaurants that all get cooked in the same delivery only kitchen.
Anyhow this concept is around for years, well established in many markets and often done by the apps themselves (deliveroo, grab, talabat etc). Hardly news
