I'd do the one you see there...
My GF makes them with turkey burger... It seems to be the only thing you can use that shit in and it still tastes good. |

Olive oil in a frying pan (low heat) - add one or two chopped onions + carrots + celery, then add some rice, and finally add some mince; add some water, tomato purée, salt, black pepper, paprika and cook for a while.
Then stuff the peppers, put them in a deep saucepan, cover them with water and put a plate on top of them - no idea why this is done, but my mother does it, so I'm sure it serves a purpose. Cook until they are done; if you want to use the oven instead, put them in a baking pan, cover 1/3 with water, and cook for 40 minutes or so... If you are fasting, you can make the stuffing with onions, rice, mushrooms, etc. and skip the mince. |

I mix cooked beef, salt & pepper, red pepper, & tomato sauce in green peppers and top with cheese and then toss it in the oven at 350 for an hour. Only twist is boiling the pepper for 5 minutes before stuffing so it softens up in the oven. Serve over potato or rice.
