I am Swedish and I never tried surströmming. Most swedes had not tasted it I guess.
I was invited to a so called surströmmingsskiva but I left the party early because of the smell...

I've heard from tourists many think that this is something we eat on a daily basis. Which is not true. Its exotic even for me.

Surströmming is most popular in the north of Sweden, on the east coast.

Some eat it like once a year yea, but I'd say most Swede's have never even tasted it. it's salted and fermented fish, it doesnt taste as bad as it smells, usually you eat it with boiled potatoes, white bread and a dressing made from creme fraich, fine chopped red onion and some salt/pepper.

What is the difference between fermented and marinated herring? How do the preparation process differ? Just less salt (barely enough to prevent rotting)?

I can say four. The fruit, feet, eggs and octopus. Add to that snake, monkey, various bugs, shrimp heads, snails and frogs.

Here in Czech they have a dislike of lamb. A few eat it but buying it is tough.

Oh... it depends a lot. The region and the type of kebab. For example, shawarma is a kebab (döner kebab) which is usually made with chicken meat. Russian/Georgian shashlik (shish kebab) is usually made with pork meat, while the Azerbaijani or Armenian made from lamb meat (personally I like both). Lula-kebab can be made of lamb, pork, chicken and even beef. There are many other types of kebab such as tandir kabab, tava kebab, chag kebab etc...

To be honest when I (or 99% of people in Eastern Europe) hear "kebab shop" they imagine Doner kebab places and 0% of them even think about shashlik places.
Anyways - you also confirmed that you can not get lamb in ANY kebab place.

Of course not. Russian shashlk is usually made of pork - this food has became the traditional dish here many centuries ago. The ethnic Muslims do it with lamb. Russian/Georgian shashlik (shish kebab) is usually made with pork meat, while the Azerbaijani or Armenian made from lamb meat (personally I like both). Lula-kebab can be made of lamb, pork, chicken and even beef. There are many other types of kebab such as tandir kabab, tava kebab, chag kebab etc...

I grew up in Milwaukee with Ma Baensch Pickled Herring. It's amazing. I always keep a jar in the refrigerator. From what I've read, it's especially a German and East European thing, though you'll find it at Kosher food stores, too.

The first time I visited Amsterdam - about 1981 - I tried one of those whole herrings - expecting the taste of marinated herring. Instead, it kinda felt and tasted like biting into a big piece of lard or animal fat. I've skipped it on later visits.

They all offer chicken and most also give the option of lamb.

And you sure can get a lamb steak in certain restaurants, it is only hard to buy in stores.

Sorry, confused lamb meat with veil. But what I said about pork is correct, never seen pork kebab. The kebab fastfoods offer chicken as #1, then they offer veil as an option but it is clear that chicken is much more popular.
