We have some people at YNOT Mail who use split testing when sending out emails. It's kind of neat really - you can tell not only which emails get opened more, but also which one results in clicks.
No, I don't think it's like gambling. It's more like picking the best option and moving forward.

It's only gambling if you don't have the traffic to get within a margin of certainty. If you do have the traffic you are leaving money on the table.
