To clarify - Java programmers are in most demand jobs,while PHP/web programming is most demand one time jobs.It is very simple why is that - a PHP project can be anything,could let say print hello world project,while JAVA projects are usualy on more serious note.Also,java programmers are like 2x or possibly even more paid then php programmers.

growth might be better indicator of what's "hot" now a days...

yea, php is in demand, but also everyone and their dog knows php now a days... so unless you are pretty good, you aren't going to make any great money with it...

key is using the right language for the job, no one is ever going to do any serious computation with php, so the fact that php performs poorly on these specific tests is meaningless...

It really depends on the true needs of the project.
Whats the size of the project, budget, expected load, form function and features etc.

Yes PHP is notorious to be slow which is why some of developers "escaped" to ruby,and that is why facebook build their fork of PHP.But php authors said how they will with PHP 7 make serious update which will resolve speed problem once for all.
