I can't handle too much heat - It hurts my mouth and I don't like pain...

I love Thai sweet chili, it's pretty mild - Hot toast with Phili cream cheese and sweet chili is heaven.....

Sambol oelek. Chinese restaurants use it locally for General Gau’s Chicken (General Tso’s in some areas of the USA), various spicy dishes. I asked my favorite chef what he used years ago. Whenever I’d order food extra spicy, they’d come out from the back to see if I was Asian! At one restaurant in Providence they asked if I had Chinese relatives!

Equal weight quantities of fresh sliced chilli's, sugar and white vinegar and for every cup of vinegar add a garlic clove or two, blend it, then throw in a pot and bring to boil, simmer for about 40-60 minutes until thickened. Lasts a few months in fridge.

I like hot souces and peppers. I can easily add ones of 100,000 Scovilles (e.g. Thai peppers) into my food and that's cool on the enter. The problem I have is on exit on the next day... It burns.

Jalapeno? Pff... 1,000-10,000 Scovilles. I have these peppers in the fridge and eat them right from a jar. They are not hot at all.

Yes, it has a very good taste and cool for anything like pizza or even a sandwich. But this thread is about something like Mad Dog 375 etc. Like Carolina Reaper.

Tobasco. The vinegar is adds quite a lot of flavor.

I give Sri Racha 3/5 stars. I think it has too much garlic flavor, which doesn't go well with many dishes. It's also too fermented, which doesn't go with many dishes too. It's just too strong and too flavorful. It's not a good pairing with lighter foods.

I give those mexican hot sauces above 1/5 stars. Way too hot! It overpowers the food itself. I know somewhat about pairing foods with wine; so, to me, a good hot sauce is one that'll add flavor to food, not just burn.
