No, just fillet it, usually will blacken it. Sometimes leave the meat on the skin and put it on the pit like that. The trout I always fry and i just use the fillets.

Nice. The cheek is a pain to get to, but it's the sweetest part of the fish. You should try it sometime.

using a batter of yellow mustard and Louisiana hot sauce then rolled in the fish fry you showed comes out tasting really good, but i have a couple different recipes for frying fish. beer batters, egg based ones etc.

y'all rly got me hankering for redfish now, i'm going to call my pops and ask him how they did those cubes when i was growing up, i think they used a beer batter back then. damn it was good.

both, hot sauce and yellow mustard. Mostly mustard, cover the top of it pretty good with hot sauce, mix then put fish in, latter them up with it, then pat them down with the fish fry, into the fryer. Very simple, taste great.

If I feel like messing with it we can take the heads and guts and use them to bait a couple crab traps, put them out for a day or two and then you got yourself a nice crab boil :)

I'd probably pass on the fish head soup though ;)

It was 3 of us, we caught 55 Speckled Trout and 1 Red Fish. The trout averaged about 2-3 pounds each, the Red Fish was about 8 pounds. Will be eating fish a little bit later, nothing like fresh fried fish for dinner :)

Who's law? I'm not in Florida. State of Louisiana allows you to catch (keep) 25 Speckled Trout per day per person. As I said, there was 3 of us so our limit would have been 75 total. http://www.wlf.louisiana.gov/fishing...nd-size-limits

And if I did "break the law" why would that be ironic? I've been known to go over the speed limit too... OMG. Just because I chose to conduct my business with ethics and not steal or screw people I do business with doesn't mean I walk on water of pretend too. And yes I know, you are likely just joking with me but that comment is one I do get from time to time from people who are serious, sadly enough.

Believe it or not, when I was in NZ, I saw a picture of a 42 lb trout some guy caught in a glacial lake. Huge MF!
